  • 0.3 cup bourbon 
  • tablespoon butter 
  • 0.5 cup carrots chopped
  • 0.5 cup celery chopped
  • cup chicken broth 
  • pound chorizo chopped
  • 12 servings skillet cornbread crumbled
  • 0.5 pound crawfish tails frozen thawed peeled
  • tablespoons cilantro leaves fresh chopped
  • teaspoon sage fresh chopped
  • teaspoon thyme leaves fresh
  •  garlic cloves minced
  • 0.5 pound lump crab meat fresh
  • cup onion chopped
  • 12 ounce dozens oysters fresh drained
  • 0.5 cup pecans toasted chopped
  • 0.5 teaspoon pepper 
  • 0.3 teaspoon salt 
  •  to 4 serrano chile peppers seeded finely chopped
  • cup whipping cream

Directions

  1. Brown sausage in a nonstick skillet over medium heat; drain well on paper towels. Set sausage aside.
  2. Melt butter in a large skillet over medium heat; add onion and next 4 ingredients, and saute until tender.
  3. Add bourbon. Bring to a boil; reduce heat, and simmer 5 minutes.
  4. Combine chorizo, vegetable mixture, cornbread, and remaining ingredients; toss gently.
  5. Spoon mixture into a lightly greased
  6. - x 9-inch baking dish.
  7. Bake at 350 for 30 minutes.
  8. *1/4 cup chicken broth may be substituted.
