  • tablespoons canola oil 
  • 0.3 cup fish sauce 
  • pound flank steak very thinly sliced
  • cloves garlic minced
  • cup mint leaves fresh whole
  •  bell pepper red cored stemmed seeded cut into 1/ slices
  • tablespoon chili paste in soy bean oil 
  •  shallots thinly sliced
  • tablespoons soya sauce black
  • servings serving suggestion: sticky white steamed
  • tablespoons soya sauce sweet
  • 1.5 cups thai basil leaves fresh chopped
  •  thai chiles such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced* (see cook's note)

Directions

  1. Watch how to make this recipe.
  2. In a large skillet, heat the oil over medium-high heat.
  3. Add the garlic and chiles and cook until aromatic, about 30 seconds.
  4. Add the steak and cook, stirring frequently, for 2 minutes.
  5. Add the shallots and bell pepper and cook for 1 minute.
  6. Add the fish sauce, sweet soy sauce, black soy sauce and chili paste. Bring the mixture to a low simmer and cook, stirring frequently until the meat is cooked through and the vegetables are tender, about 3 minutes.
  7. Remove the skillet from the heat and stir in the basil and mint until wilted.
  8. Transfer to a serving dish and serve over steamed white rice.
