Ingredients

  • tablespoons flour 
  • 0.8 teaspoon pepper black freshly ground
  • 1.3 cups buttermilk 
  • teaspoons kosher salt 
  • large egg whites 
  • large egg yolk 
  • 1.5 cups parmesan cheese grated
  • ounce spinach frozen dry thawed chopped
  • 0.3 cup butter unsalted ()

Directions

  1. Preheat oven to 375°F. Butter eight 1-cup soufflé dishes or custard cups; place on large rimmed baking sheet. Melt 1/4 cup butter in large saucepan over medium heat.
  2. Add flour; whisk 1 minute.
  3. Add buttermilk; whisk 1 minute. Stir in spinach and next 4 ingredients. Set aside.
  4. Using electric mixer, beat egg whites in large bowl until firm peaks form. Fold egg whites into spinach mixture in 3 additions. Divide equally among prepared dishes.
  5. Bake soufflés until puffed and brown on top, about 30 minutes.
  6. Serve immediately.
