  • 0.7 cup brown sugar packed
  • large egg white 
  • ounce evaporated milk fat-free canned
  • cup flour all-purpose
  • 0.5 cup granulated sugar 
  • 0.5 teaspoon ground cinnamon 
  • 0.3 cup butter melted
  • 0.3 cup pecans toasted chopped
  • 2.5 pounds sweet potatoes peeled halved
  • 1.5 teaspoons vanilla extract

Directions

  1. Preheat oven to 35
  2. Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside.
  3. Place potatoes in a Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender.
  4. Drain well; mash in a large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, and milk. Spoon into a 2-quart casserole coated with cooking spray; top with remaining streusel.
  5. Bake at 350 for 45 minutes.
