  • 0.3 teaspoon apple-pie spice 
  • cup self-rising cornmeal yellow
  • large eggs 
  • cups buttermilk low-fat
  • 10 tablespoon blackstrap molasses 
  • 2.5 cups self-rising flour 
  • cup sweet potatoes and into diced cooked peeled
  • teaspoons vegetable oil

Directions

  1. Lightly spoon flour into dry measuring cups; level with a knife.
  2. Combine flour, cornmeal, potato, and spice in a large bowl.
  3. Combine buttermilk and eggs; add to flour mixture, stirring until smooth.
  4. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Spoon 2 tablespoons batter per fritter into hot pan; cook 3 minutes on each side or until golden brown. Repeat procedure with remaining oil and batter.
  5. Serve fritters with molasses.
