  • tablespoon chiles in adobo sauce 
  •  eggs lightly beaten
  • 0.5 cup goat cheese 
  • tablespoons green onions sliced
  • pinch ground cinnamon 
  • tablespoons honey 
  • 0.5  juice of lemon juiced
  • cup mayonnaise 
  • 24 servings vegetable oil; peanut oil preferred 
  • 0.3 cup pecans chopped
  • medium sweet potatoes 
  • 24  wonton wrappers

Directions

  1. Watch how to make this recipe.
  2. Preheat oven to 350 degrees F.
  3. Wash and dry sweet potatoes.
  4. Place on a sheet tray and poke with fork.
  5. Place in preheated oven and bake for 40 minutes or until cooked and soft.
  6. Remove until cool enough to handle. Split potato and remove pulp with a spoon into a mixing bowl.
  7. Add goat cheese, pecans, green onions and cinnamon.
  8. Mix well.
  9. Preheat deep-fryer to 375 degrees F.
  10. Brush outer edges of the wonton with beaten egg.
  11. Add about 1 teaspoon to center of each wanton. Fold edges over to make a triangle and seal edges firmly.
  12. Fry wontons in deep-fryer. Flip and wait until golden brown and crisp.
  13. Remove with a spider and drain on a paper towel lined sheet tray.
  14. Mix all ingredients well together.
  15. Serve with empanadas.
