Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • tablespoon butter softened
  • tablespoon flour all-purpose
  • teaspoon thyme leaves fresh chopped
  • 0.5 teaspoon kosher salt 
  • 0.5 cup parmesan cheese fresh divided grated
  • cup onion sweet thinly sliced
  • pounds sweet potatoes peeled thinly sliced ( 3 large)
  • 0.5 cup vegetable broth organic

Directions

  1. Melt butter in a medium nonstick skillet over medium heat.
  2. Add onion; saut 5 minutes or until lightly browned.
  3. Combine onion, sweet potato, next 4 ingredients (through pepper), and 1/4 cup cheese in a large bowl, tossing to coat with flour. Coat a 4-quart electric slow cooker with cooking spray.
  4. Transfer vegetable mixture to slow cooker.
  5. Pour broth over potato mixture.
  6. Sprinkle with remaining 1/4 cup cheese. Cover and cook on LOW for 4 hours or until potato is tender.
