Ingredients

  • cups apple without peel diced
  • 15 ounce pineapple crushed drained canned
  •  eggs beaten
  • tablespoon flour all-purpose
  • cups marshmallows miniature
  • cup peanuts spanish chopped
  • ounce non-dairy whipped topping frozen thawed
  • 0.5 cup sugar white
  • 1.5 tablespoons citrus champagne vinegar

Directions

  1. Mix together the pineapple and marshmallows; set aside.
  2. In a saucepan, combine the reserved pineapple syrup, sugar, flour, egg and vinegar.
  3. Mix together well and cook over medium heat until slightly thickened. Set aside to cool.
  4. Add the whipped topping, pineapple mixture, apples and 3/4 cup peanuts.
  5. Mix together well and refrigerate until chilled.
  6. Sprinkle top with extra 1/4 cup peanuts.
