Ingredients

  • pound asparagus fresh ()
  • cup cherry tomatoes halved
  • tablespoon fish sauce 
  • pound flank steak trimmed
  • 0.5 cup basil fresh thinly sliced
  • tablespoons juice of lime fresh
  • ounces wide rice stick noodles (bánh pho)
  • 0.3 teaspoon salt 
  • tablespoon sugar 
  • 0.5 teaspoon thai curry paste red
  • cups water

Directions

  1. Heat a large grill pan over medium-high heat.
  2. While pan heats, bring water to a boil in a large saucepan.
  3. Add steak to grill pan; grill 5 minutes on each side or until desired degree of doneness.
  4. Sprinkle steak with salt.
  5. Cut steak across grain into thin slices.
  6. While steak cooks, add asparagus to boiling water; cook 2 minutes.
  7. Remove asparagus with a slotted spoon.
  8. Add noodles to boiling water; cook 3 minutes or until done.
  9. Drain; rinse well.
  10. Cut noodles into smaller pieces; place in a medium bowl.
  11. While noodles cook, combine sugar, lime juice, fish sauce, and curry paste in a large bowl.
  12. Add one-half of lime mixture to medium bowl with noodles; toss to coat.
  13. Add steak, asparagus, tomatoes, and basil to remaining lime mixture in large bowl; toss to combine.
  14. Serve steak mixture over noodles.
