Ingredients

  •  carrots thinly sliced
  • teaspoon basil fresh chopped
  • cloves garlic finely minced
  • tablespoons very thinly slivered ginger fresh peeled
  •  green onions minced
  •  juice of lime grated
  • cup mushrooms sliced
  • packages chicken-flavor ramen noodles 
  • ounces shrimp deveined peeled
  • tablespoons soya sauce 
  • cups pkt spinach fresh coarsely chopped
  • tablespoon thai chili sauce hot
  • cups water

Directions

  1. Bring water to a boil in a soup pot.
  2. Add green onions, carrots, fish sauce, chili sauce, garlic, ginger, and basil to pot.
  3. Add 2 ramen noodle seasoning packets (if you add all 4 packets, the soup will probably be too salty). Boil 5 minutes.
  4. Add shrimp, spinach, mushrooms, and ramen noodles. Cook 5 more minutes.
  5. Add lime juice and zest. Stir well and serve.
