  • teaspoon baking soda 
  • 0.3 cup brown sugar light packed
  • 0.3 cup butter softened
  • 1.5 cups m&m candies 
  • 0.3 cup cocoa powder 
  • large eggs 
  • 1.5 cups flour all-purpose
  • cups whipped cream 
  • 0.5 teaspoon salt 
  • 0.3 cup sugar 
  • teaspoons vanilla extract

Directions

  1. Beat first 3 ingredients at medium speed with an electric mixer 4 minutes or until creamy.
  2. Add eggs and vanilla, beating until blended.
  3. Combine flour and next 3 ingredients in a small bowl; gradually add to butter mixture, beating just until blended. Stir in candy-coated chocolate pieces just until combined. Drop mixture by tablespoonfuls onto greased aluminum foil- or parchment paper-lined baking sheets.
  4. Bake, in batches, at 350 for 8 to 10 minutes.
  5. Remove to wire racks, and let cool completely, about 15 minutes.
  6. Place a small scoop of ice cream between 2 cookies. Press together gently; serve immediately, or wrap in aluminum foil or plastic wrap, and freeze until ready to serve.
