  • ounces country bread white toasted diagonally sliced into 8 (1/4-inch) pieces and
  • cup .5 can cannellini beans cooked
  • teaspoons olive oil extravirgin
  • 0.3 cup basil fresh thinly sliced
  •  garlic clove minced
  • Dash pepper red crushed
  • cup plum tomatoes peeled seeded chopped
  • 0.5 teaspoon salt

Directions

  1. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray.
  2. Add tomato and garlic; cook 2 minutes, stirring constantly.
  3. Add cannellini beans, salt, and red pepper to pan, mashing beans with a fork. Cook 1 minute or until thoroughly heated.
  4. Remove from heat.
  5. Spread bean mixture evenly over each bread slice; drizzle each slice with 1/2 teaspoon extravirgin olive oil, and then top each with 1 1/2 teaspoons basil.
