  • tablespoons add carrot and onion to bacon fat . cook 
  • 0.5 tablespoon basil chopped
  • tablespoons basil minced
  • ounce alouette garlic & herbs spreadable cheese (Boursin)
  • rib celery stalks diced
  • cups chicken stock see 
  • servings chives chopped (to garnish)
  • loaf crusty baguette diced french
  • tablespoon sea salt 
  • cups cup heavy whipping cream 
  • tablespoons olive oil 
  • small onion diced
  • 0.5 tablespoon parsley chopped
  • 0.5 tablespoon rosemary chopped
  • servings salt and pepper 
  • 0.5 tablespoon thyme leaves chopped
  • cups sacremento tomato juice 
  • 0.5 cup tomato paste 
  • small tomatoes diced
  • cups vegetable juice

Directions

  1. For the Tomato Bisque: In a large soup pot melt bacon fat, add onions and celery. Cook onions and celery until translucent, do not brown.
  2. Add tomatoes, basil and cook for 2 minutes.
  3. Add tomato juice, V-8 juice, tomato paste, chicken stock and simmer 15 minutes.
  4. Add heavy cream and bring back to a boil. Turn off heat and add the tub of cheese.
  5. Add salt and pepper to taste.For the Garlic Croutons: In a large bowl, mix all ingredients together.
  6. Place soup in bowl, add croutons in soup and garnish with chives.
