Ingredients

  • tablespoons add carrot and onion to bacon fat . cook 
  • 0.3 teaspoon thyme leaves dried
  • 0.5 cup milk 
  • 0.3 teaspoon pepper freshly ground
  • 0.5 teaspoon salt 
  • cups tomatoes peeled seeded finely chopped
  • cup vidalia onion finely chopped
  • tablespoons soft-wheat flour white all-purpose (such as Lily)

Directions

  1. Heat bacon drippings in a large skillet over medium heat.
  2. Add onion, and cook, stirring often, 5 minutes.
  3. Sprinkle onion with flour, and cook, stirring constantly, 3 minutes.
  4. Add tomato and next 3 ingredients. Cook, stirring often, 6 minutes.
  5. Add milk, and bring to a light boil; reduce heat to a simmer, and cook, stirring often, 2 minutes. (If gravy becomes too thick, add more milk for desired consistency.)
