Ingredients

  • 0.5  long baguette stale cut into cubes (slightly works great)
  • tablespoon balsamic vinegar 
  • cup cherry tomatoes halved
  • teaspoons dijon mustard 
  • tablespoons basil leaves fresh roughly chopped (or oregano)
  • cup cannellini beans white cooked
  • 0.3 cup kalamata olives pitted sliced
  • servings kosher salt and pepper black freshly ground
  • ounce tuna light packed in oil, drained canned
  • tablespoons olive oil 
  •  shallots thinly sliced

Directions

  1. Watch how to make this recipe.
  2. In medium serving bowl, add the tomatoes and season with salt and pepper, to taste.
  3. Let sit for 10 minutes before adding the beans, tuna, shallots and olives. Just before serving, mix in the bread cubes and combine gently.
  4. In a small bowl, whisk together the mustard, vinegar and salt and pepper, to taste.
  5. Drizzle in the oil, whisking to blend.
  6. Pour over the salad just before serving.
  7. Add the basil and toss. Taste for seasoning before serving.
