  • ounces mushrooms sliced
  • teaspoons kosher salt 
  • large eggs lightly beaten
  • tablespoon thyme sprigs fresh chopped
  • 0.5 teaspoon pepper black
  • pound pd of ground turkey 15% ( fat)
  • pound pd of ground turkey 
  • cups seasoning cubes crustless
  • cup chicken broth 
  • tablespoons olive oil extra virgin extra-virgin for brushing
  • tablespoons parsley fresh italian chopped
  • 0.3 cup shallots minced

Directions

  1. Preheat oven to 350°F.
  2. Brush 8 1/2 x 4 1/2 x 2 1/3-inch loaf pan with olive oil.
  3. Toss bread with broth in large bowl.
  4. Letstand until bread absorbs broth and softens,about 10 minutes.
  5. Mix in mushrooms, eggs,shallots, parsley, thyme, coarse salt, pepper,and 2 tablespoons oil.
  6. Add turkey; mix just until blended.
  7. Transfer to pan, mounding in center.
  8. Bakeuntil thermometer inserted into centerregisters 170°F, about 1 hour 25 minutes.
  9. Let rest 15 minutes before serving.
