Ingredients

  • ounce tomato sauce canned
  • 28 ounce canned tomatoes diced undrained canned
  • teaspoons garlic powder mccormick®
  • 0.5 teaspoon ground pepper black mccormick®
  • teaspoons penzey's southwest seasoning italian mccormick® perfect pinch®
  • ounce mushrooms sliced
  • tablespoons olive oil 
  • small onion chopped
  • ounces soup noodles such as spaghetti or linguine
  • pound zucchini and/or squash yellow sliced

Directions

  1. Mix tomatoes, tomato sauce, sugar and seasonings in medium saucepan. Bring to boil on medium heat. Reduce heat to low; cover and simmer 20 minutes.
  2. Heat oil in large skillet on medium-high heat.
  3. Add zucchini, mushrooms and onion; cook and stir 4 minutes or until vegetables are tender-crisp. Stir tomato sauce into vegetables.
  4. Meanwhile, cook pasta as directed on package.
  5. Drain well.
  6. Place pasta in serving bowl.
  7. Add vegetable mixture; toss well.
  8. Sprinkle with shredded Parmesan cheese, if desired.
