Ingredients

  •  eggs 
  • 1.3 cups flour all-purpose
  • 0.5 teaspoon salt 
  • 1.3 cups torn spinach leaves 
  • tablespoons water 

Equipment

  • sauce pan
  • blender

Directions

  1. Combine spinach and water in a saucepan. Cover, and cook till spinach is very tender. Cool slightly.
  2. Place spinach and liquid in blender container.
  3. Add egg and salt. Cover, and blend till smooth.
  4. Transfer to a bowl.
  5. Add enough flour to make a stiff dough.
  6. Turn dough out onto a lightly floured surface. Knead for 1 minute.
  7. Roll very thin on a floured surface.
  8. Let rest 20 minutes.
  9. Roll up loosely. Slice 1/4 inch wide. Unroll.
  10. Cut into desired lengths.
  11. Spread out on a rack to dry for 2 hours.
