  • cups onion red sliced (2 medium)
  • 0.3 cup water 
  • 0.3 cup brown sugar packed
  • 0.3 cup golden raisins 
  • 0.5 cup apple juice 
  • 0.3 cup citrus champagne vinegar 
  • teaspoon ground sage 
  • teaspoon vegetable oil 
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • 0.1 teaspoon ground pepper red (cayenne)
  • lb lamb rib chops

Directions

  1. In 2-quart saucepan, place onions and water. Cover and cook over medium heat 5 minutes. Stir in remaining ingredients except veal chops; reduce heat to medium-low. Cover and cook about 50 minutes, stirring occasionally, until thickened.
  2. Set oven control to broil. Spray broiler pan rack with cooking spray.
  3. Remove fat from veal.
  4. Place veal on rack in broiler pan. Broil with tops 5 to 7 inches from heat 4 minutes; turn. Broil 4 to 6 minutes longer for medium doneness. Spoon onion mixture over veal chops.
