  • 0.5 cup barley 
  •  bay leaf 
  •  carrots chopped
  • stalks celery chopped
  • 0.5 teaspoon basil dried
  • 0.5 teaspoon thyme leaves dried
  • cloves garlic minced
  • 0.5 teaspoon ground pepper black
  •  onion chopped
  • 0.5 cup parsley chopped
  •  potatoes diced
  • 1.5 teaspoons salt 
  • cups peas dried split
  • tablespoon vegetable oil 
  • 7.5 cups water

Directions

  1. In a large pot over medium high heat, saute the oil, onion, bay leaf and garlic for 5 minutes, or until onions are translucent.
  2. Add the peas, barley, salt and water. Bring to a boil and reduce heat to low. Simmer for 2 hours, stirring occasionally.
  3. Add the carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Simmer for another hour, or until the peas and vegetables are tender.
