  • 1.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 1.5 cups blackberries frozen coarsely chopped
  • tablespoons butter melted
  • cup brown sugar dark packed
  • large eggs lightly beaten
  • cup milk fat-free
  • ounces flour all-purpose
  • 0.3 cup granulated sugar 
  • cup rolled oats 
  • 0.5 teaspoon salt 
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 40
  2. Lightly spoon flour into dry measuring cups; level with a knife.
  3. Combine flour and next 6 ingredients (through apple-pie spice) in a large bowl. Make a well in center of mixture.
  4. Combine milk, butter, vanilla, and egg in a small bowl; add to flour mixture, stirring until just moist. Gently stir in blackberries.
  5. Spoon 1/4 cup batter into each of 17 paper-lined muffin cups coated with cooking spray.
  6. Bake at 400 for 16 minutes.
  7. Sprinkle muffins evenly with granulated sugar; bake 3 minutes or until muffins spring back when touched lightly in center. Cool in pans 10 minutes on wire racks.
