Ingredients

  • large cherry tomatoes 
  • cups couscous cooked
  • 0.5 teaspoon rosemary dried
  • 0.3 cup yogurt plain fat-free
  •  garlic clove minced
  • 1.5 teaspoons ground cumin 
  • 0.5 pound leg of lamb lean
  • teaspoons olive oil 
  • small onion cut into 4 wedges
  • tablespoon onion finely chopped
  • 0.5 teaspoon pepper 
  • 0.3 teaspoon salt 
  • cups zucchini sliced (1-inch)

Directions

  1. Trim fat from lamb.
  2. Cut lamb into 1-inch pieces; set aside.
  3. Combine yogurt and next 7 ingredients (yogurt through garlic) in a large zip-top plastic bag.
  4. Add lamb, zucchini, tomatoes, and onion wedges; seal, and marinate in refrigerator 8 hours, turning bag occasionally.
  5. Remove lamb and vegetables from bag, reserving marinade.
  6. Thread lamb onto 2 (10-inch) skewers. Thread zucchini, tomatoes, and onion wedges onto 2 (10-inch) skewers. Prepare grill or broiler.
  7. Place kebabs on grill rack or broiler pan coated with cooking spray; cook 7 minutes on each side or until done, basting occasionally with reserved marinade.
  8. Serve kebabs with couscous.
