Ingredients

  • 0.3 cup firmly brown sugar packed
  •  skinned and boned chicken breast halves 
  • servings couscous hot cooked
  • teaspoon ginger fresh grated
  •  garlic cloves minced
  • servings garnish: green onions chopped
  • 1.5 teaspoons ground coriander 
  • 1.5 teaspoons ground cumin 
  • 0.3 cup juice of lemon 
  • 0.5 teaspoon pepper 
  • 0.3 teaspoon pepper dried red crushed
  • 0.5 teaspoon salt 
  • 0.3 cup soya sauce 
  • tablespoons vegetable oil

Directions

  1. Combine first 10 ingredients in a shallow dish or large heavy-duty zip-top plastic bag; add chicken. Cover or seal, and chill 30 minutes, turning chicken occasionally.
  2. Remove chicken from marinade, discarding marinade.
  3. Cook chicken in hot oil in a large skillet over high heat 4 minutes. Reduce heat to medium-low; turn, and cook 10 minutes or until done.
  4. Serve with hot cooked couscous.
  5. Garnish, if desired.
