Ingredients

  • 0.5 teaspoon bottled garlic minced
  • 15.5 ounce garbanzo beans drained canned (garbanzo beans)
  • pound chicken breast cut into 1-inch pieces
  • teaspoon sriracha hot (such as Sriracha)
  • 0.8 cup couscous uncooked
  • teaspoons curry powder 
  • cup fat-skimmed beef broth fat-free
  • teaspoon olive oil 
  • cup plum tomatoes chopped
  • 0.8 teaspoon salt divided
  • 10 ounce pkt spinach fresh
  • cup water

Directions

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  2. Combine 1/2 teaspoon salt, garlic, and chicken, tossing to coat.
  3. Add chicken mixture to pan; saute 3 minutes or until browned. Stir in curry powder; cook 1 minute.
  4. Add tomato, broth, chile sauce, and chickpeas; bring to a simmer. Cover and cook 8 minutes.
  5. While chicken mixture cooks, place 1/4 teaspoon salt, 1 cup water, and oil in a medium saucepan; bring to a boil. Gradually stir in couscous; remove from heat. Cover and let stand for 5 minutes. Fluff couscous with a fork.
  6. While couscous stands, poke holes in spinach bag. Microwave at high 2 minutes.
  7. Garnish with lemon wedges, if desired.
