Ingredients

  • 1.5 lb ground beef 80% lean (at least )
  • cups rice chex crushed finely
  • oz tomato sauce canned
  • cup carrots grated
  • 0.3 cup parsley fresh chopped
  • 0.8 teaspoon salt 
  • 0.8 teaspoon pepper 
  •  eggs slightly beaten
  • cups potatoes prepared mashed
  • 0.5 cup catsup

Directions

  1. Heat oven to 375°F. Spray 9-inch square pan with cooking spray.
  2. In large bowl, mix beef, cereal, tomato sauce, carrot, parsley, salt, pepper and eggs just until combined. Press half of beef mixture into pan.
  3. Spread mashed potatoes on top; cover with remaining beef mixture.
  4. Spread ketchup on top.
  5. Bake 50 to 60 minutes or until meat thermometer inserted in center of meat reads 165°F. Cool 15 minutes; cut into 4 squares.
