Ingredients

  • tablespoon olive oil 
  • 1.5 lb chicken thighs boneless skinless cut into 3/4-inch pieces
  • medium onion chopped
  • medium bell pepper green chopped
  • cloves garlic chopped
  • medium jalapeno seeded chopped
  • 29 oz canned tomatoes diced fire roasted organic undrained canned
  • 0.8 cup lager such as a boston lager
  • tablespoon cocoa powder unsweetened
  • tablespoon chili powder 
  • 0.5 teaspoon kosher salt (coarse)
  • 0.3 teaspoon ground cinnamon 
  • serving roasted pumpkin seeds salted hulled (pepitas)
  • serving corn tortillas soft

Directions

  1. In 4-quart Dutch oven, heat oil over medium-high heat.
  2. Add chicken; cook 5 to 6 minutes, stirring frequently, until browned.
  3. Add onion, bell pepper, garlic and jalapeño chiles; cook 2 minutes, stirring frequently.
  4. Stir in tomatoes, beer, cocoa, chili powder, salt and cinnamon.
  5. Heat to boiling. Reduce heat to low; simmer uncovered 15 to 20 minutes or until chicken is no longer pink in center and chili is desired consistency.
  6. Sprinkle individual servings with pepitas.
  7. Serve with corn tortillas.
