Ingredients

  • teaspoons double-acting baking powder 
  • 0.3 cup basil pesto 
  • cups flour all-purpose
  • 0.5 cup milk 
  • 10 servings parmesan shredded finely
  • teaspoon salt 
  • 0.3 cup shortening

Directions

  1. Heat oven to 450F.
  2. Mix flour, baking powder and salt in large bowl.
  3. Cut in shortening and pesto, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Stir in just enough milk so dough leaves side of bowl and forms a ball.
  4. Place dough on lightly floured surface. Knead lightly 10 times.
  5. Roll or pat 1/2 inch thick.
  6. Cut with floured 2 1/2-inch cookie or biscuit cutter.
  7. Place about 1 inch apart on ungreased cookie sheet.
  8. Sprinkle with cheese.
  9. Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet.
  10. Serve warm.
