  •  amaretti cookies italian ( macaroons;)
  • large peaches firm pitted ripe rinsed halved
  • 1.5 tablespoons sugar 
  • tablespoons unbleached all purpose flour 
  • tablespoons butter unsalted chilled cut into 1/2-inch cubes
  • servings whipped cream

Directions

  1. Preheat oven to 350°F. Butter 11 x 7 x 2-inch glass baking dish.
  2. Combine cookies,almonds, flour, and sugar in processor.Using on/off turns, process until cookiesand almonds are coarsely chopped.
  3. Add3 tablespoons chilled butter to processor.Using on/off turns, process topping mixtureuntil moist clumps form.
  4. Place peach halves, cut side up, inprepared dish.
  5. Spread topping over surfaceof each peach half (about 1 generoustablespoon for each), pressing lightly toadhere and leaving 1/4-inch plain border.
  6. Bake peaches until tender whenpierced with knife and topping is goldenbrown, about 35 minutes. Cool slightly.
  7. Transfer 1 warm roasted peach half toeach of 6 plates.
  8. Serve with scoop of vanillaice cream alongside.
