Shish Kebabs with Onions and Pomegranate Molasses offer a vibrant and flavorful twist on a classic Middle Eastern favorite. Perfectly suited for those seeking a gluten-free and dairy-free option, this recipe combines tender cubes of boned leg of lamb with the sweet and tangy richness of pomegranate molasses. The addition of fresh grated onion in the marinade infuses the meat with a subtle sweetness and depth, while the skewered onion pieces add a delightful texture contrast when grilled.

Ready in just 45 minutes of active cooking time (plus marinating), these kebabs are an excellent choice for entertaining a crowd, serving up to 15 guests with a light yet satisfying appetizer or snack. Each bite delivers a balanced nutritional profile, with nearly half of the calories coming from protein, making it a nourishing option that doesn’t compromise on taste. The broiling method ensures a quick cook with a beautifully caramelized exterior, locking in the juicy flavors of the lamb.

What truly sets this recipe apart is the finishing touch of pomegranate molasses drizzled over the kebabs just before serving, adding a glossy, tangy glaze that complements the smoky char from the broiler. Whether you’re hosting a casual gathering or looking to impress with a unique starter, these shish kebabs bring a burst of Middle Eastern flair to your table. Garnish with fresh lemon and oregano for an extra layer of brightness and aroma, and enjoy a dish that’s as visually appealing as it is delicious.
