Ingredients

  • slices bacon 
  • pound baking potatoes diced peeled
  •  bay leaves 
  • 1.3 cups celery chopped
  • 32 ounce bottled clam juice 
  • 39 ounce clams undrained chopped canned
  • 0.5 teaspoon thyme dried
  • cups skim milk fat-free
  • 2.3 ounces flour all-purpose
  •  garlic clove minced
  • cups onion chopped
  • 0.5 teaspoon salt

Directions

  1. Cook bacon in a large Dutch oven over medium heat until crisp.
  2. Remove bacon from pan, reserving 1 teaspoon drippings in pan. Crumble bacon; set aside.
  3. Add onion, celery, salt, thyme, and garlic to drippings in pan; cook 4 minutes or until vegetables are tender.
  4. Drain clams, reserving liquid.
  5. Add clam liquid, potato, clam juice, and bay leaf to pan; bring to a boil. Reduce heat, and simmer 15 minutes or until potato is tender. Discard bay leaf.
  6. Combine milk and flour, stirring with a whisk until smooth.
  7. Add flour mixture to pan; bring to a boil. Cook 12 minutes or until thick, stirring constantly.
  8. Add clams; cook 2 minutes.
  9. Sprinkle with bacon.
