Ingredients

  • Tablespoons apple sauce 
  • teaspoon baking soda 
  • 0.3 cup carob chips 
  • 0.3 cup cocoa / carob powder (may sub cocoa powder)
  • cup vanilla non-dairy-milk plain (such as soymilk, ricemilk, oatmilk, etc. - I use oatmilk)
  • 0.3  graham crackers 
  • 0.3 cup marshmallows chopped
  • 0.3 cup powdered sugar 
  • teaspoon vanilla extract pure
  • 1.5 cups flour whole wheat

Directions

  1. Preheat oven to 350°F.In a large bowl, combine flour, powdered sugar, carob powder and baking soda, and mix well.In a separate bowl, combine applesauce, vanilla, nondairy-milk, carob chips, graham cracker pieces and marshmallows, mixing well.
  2. Combine wet and dry ingredients; do not overmix.
  3. Bake for 15-18 minutes, until a toothpick inserted in the middle of muffins comes out clean.
