Ingredients

  • tablespoon vegetable oil 
  • 1.3 lb chicken breast boneless skinless
  • oz mushrooms fresh sliced (3 cups)
  • 0.3 cup spring onion chopped
  • 0.3 teaspoon salt 
  • 0.3 cup chicken broth 
  • 0.5 cup whipping cream (heavy)
  • serving nests of spinach fettuccine hot cooked

Directions

  1. In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 10 to 15 minutes, turning once, until chicken is clear when center of thickest part is cut (170°F).
  2. Stir in mushrooms, onions, salt and brandy. Cook 4 to 5 minutes or until mushrooms are tender and most of the liquid has evaporated.
  3. Gradually stir in whipping cream. Cook about 2 minutes or until hot.
  4. Serve over fettuccine.
