Ingredients

  • cups bread crumbs italian trimmed ( of crust)
  • tablespoons olive oil 
  • 0.8 cup onion red peeled very thinly sliced
  • small garlic clove minced
  • serving salt and pepper freshly ground
  • ounces sausage sweet italian ()
  • ounces cherries dried sour coarsely chopped
  • teaspoon rosemary leaves fresh finely chopped
  • 0.3 cup chicken stock see 
  • tablespoons parsley fresh coarsely chopped

Directions

  1. Heat oven to 400 degrees.
  2. Spread bread in a single layer on a rimmed baking sheet and toast, stirring occasionally, until golden brown, about 10 minutes.
  3. Let stand until cool.
  4. Make stuffing: Set a large skillet over medium-high heat until hot, then heat the oil.
  5. Add onion and garlic, and season with salt and pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes.
  6. Add sausage and cook, breaking it up with the back of a spoon, until cooked through, about 3 minutes. Stir in cherries and rosemary, and cook 1 minute more.
  7. Pour in stock and stir to combine, then stir in bread, making sure all parts are moistened with liquid.
  8. Remove from heat and stir in parsley. Adjust seasoning as desired, before proceeding with the Stuffed Turkey Breast recipe.
