  • 0.3 cup flour all-purpose

  • servings hardboiled eggs fresh freshly ground chopped

  • Dash old bay seasoning 
  • tablespoons onion minced
  • 0.3 teaspoon paprika 
  • 0.5 teaspoon pepper freshly ground
  • 0.5 teaspoon salt 
  • teaspoons worcestershire sauce

Directions

  1. Melt butter in a Dutch oven over low heat; add onion and cook over medium heat, stirring constantly 5 minutes or until tender.
  2. Whisk in flour until mixture is smooth. Cook 1 minute, whisking constantly. Gradually whisk in half-and-half; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in salt and next 6 ingredients.
  3. Add roe, if desired, and sherry to taste.
  4. Garnish, if desired.
